Game from the Médoc on our plates – a “Maison du Gibier” for our region
In the Médoc, forests are abundant and the natural environment is home to a large amount of game. Every year, animals are taken as part of hunting activities.
Yet today, it is almost impossible for residents to buy local game. This is unfortunate, because game meat is a natural product of high quality and deeply connected to our territory.
Our idea
We propose creating a “Maison du Gibier” in the Médoc.
It would be a place where game from hunting could be inspected, stored in cold conditions and prepared for sale in proper sanitary conditions.
Such a structure would make local game available to residents, butchers and restaurants.
What would be needed
To sell game meat, certain sanitary rules must be respected.
1. Training for hunters
Hunters who wish to sell game must complete specific training. They learn in particular how to:
- examine the animal after the hunt
- recognise possible signs of disease
- handle and transport the game under proper hygienic conditions
2. A collection point – the Maison du Gibier
The game could then be brought to a Maison du Gibier, where it would be possible to:
- store it in cold conditions
- carry out the necessary inspections
- ensure traceability
- prepare the meat for butchers or restaurants
Such a structure could remain simple and functional, for example with cold storage rooms and a small preparation area.
Benefits for the region
This initiative would make it possible to:
- make local game accessible to residents
- offer Médoc game in restaurants
- promote local products and short supply chains
- strengthen the gastronomy and identity of the region
Game is part of the Médoc’s natural heritage. With a Maison du Gibier, this local resource could find its place again on our plates.
